Southwest Beefy Pasta

If you’re a fan of pasta and love a little spice in your food, then you’ll absolutely love southwest beefy pasta. This dish takes classic pasta and infuses it with the bold and flavorful ingredients of the Southwest, resulting in a mouth-watering meal that’s sure to become a family favorite.

To make southwest beefy pasta, you’ll need a few key ingredients. First, you’ll need beef – preferably ground beef, but you can also use steak, ground turkey or even shredded beef if you prefer. You’ll also need some pasta – any type will do, but something with a bit of texture, such as rotini or penne, works particularly well. For the Southwest flavor, you’ll need spices such as cumin, chili powder, and paprika. (Click Southwest Seasoning to make your own) Some additional ingredients that could be used as well would be bell peppers, onions, and corn. I don’t add those because, well… kids! Finally, you’ll need some cheese – cheddar or Monterey jack both work well.

To make the dish, start by cooking the beef in a large skillet until it’s browned and cooked through. While the beef mixture is simmering, cook the pasta according to the package instructions. If you are adding in some additional veggies like diced onions and bell peppers, along with some garlic if desired, this would be the step to add them and cook, until the vegetables are tender. Next, add in your Southwest Seasoning (if you don’t have one, its super easy to make your own, and way better) – and stir until the beef and vegetables (if you’re using them) are coated in the seasoning. Then, add in a can of diced tomatoes and broth, then let the mixture simmer for a few minutes until the flavors have melded together.

While the beef mixture is simmering, cook the pasta according to the package instructions. Once the pasta is cooked, drain it and add it to the beef mixture, stirring until everything is well combined.

The end result is a delicious and hearty meal that’s perfect for any night of the week. The combination of spicy beef, tender pasta, and melted cheese is truly irresistible, and if you choose to add the addition of vegetables adds a nutritious twist to the dish. Plus, because it’s made in just one pan, clean-up is a breeze.

Plus, it’s a great way to mix up your usual pasta routine and add a little variety to your dinner table. Equipment

  • large pot
  • large sauce pan
  • strainer

Ingredients

  • 1 lb ground beef or meat of you choice
  • 14 oz diced tomatoes do not drain
  • 1 cup beef stock
  • 12 oz Cacitappi pasta or pasta of choice
  • 2 tbsp southwest seasoning
  • 1/4 cup sour cream or heavy cream
  • 1 cup shredded mexican cheese blend
  • olive oil
  • salt and pepper

Instructions

  • Bring a pot of salted water to a boil, and cook pasta according to package directions, except, cook to aldente.
    Reserve ¾ cup of pasta cooking water.
  • Add a drizzle of olive oil to pan, add beef and southwest seasoning. Cook, breaking up meat into pieces, until beef is browned and cooked through. 4 to 6 minutes.
    Add the diced tomatoes, cook, stirring occasionally, about 1 minute.
  • Add ¼ cup of pasta water and the beef broth. (save the rest of the pasta water to possibly use later) Season with salt and pepper to taste. Bring to a simmer and cook, until thickened, 3 to 4 minutes.
  • Reduce heat to low, and stir in drained pasta, cour cream, and cheese. Stir until blended. Add reserved pasta water, a little at a time, if need to make sure pasted is coated in creamy sauce.
    Serve warm and enjoy!
    Garnish with sliced scallions if you have them.

It’s always a hit as an appetizer! Serve it with some sliced bread or crackers. And if there is any left over, I put it in a jar, keep in the fridge and use it in my cooking. 

Directions: Heat oven to 275 degrees F. Put a few heads of peeled garlic cloves in a small baking dish. Cover with EVOO (extra virgin olive oil) and sprig of fresh rosemary, and a few sprigs of fresh thyme. Bake, uncovered, for 2 hours or until garlic is golden brown. 
Let cool slightly. Smear on whatever your heart desires!

Whelp, it’s official. I drove my mom some 2,200+ Whelp, it’s official. I drove my mom some 2,200+ across the country to her new residence. CA to TN

It’s been a long few months helping her go through her things. It’s been stressful, tearful, sometimes infuriating, a lot of sleepless nights and super early mornings. But after it’s all said and done, I’m lucky I choose to help her rather than let her handle it on her own. 

She won’t be here forever, and it’s inevitable that I will have to go through her things. When that time comes, it will be tears of grief, the memories, the love I have for her and part of my heart that only she has. 

If you have a parent that has a lot of things, or a tremendous amount of things, I encourage you to help them go through, simplify and purge. 

It won’t be easy, I can almost guarantee that! Probably the harder task is to get them to actually go through their things. I’ve been doing this for 3 years with my mom. It was only the last few months she took the task seriously and jumped on board. 

I still have so much to go through, but reflecting back on the blessing and realizing MINDSET IS EVERYTHING!!

But through it all, we laugh at each other, and find the silver lining. It’s either that or we are delusional… at this point no one knows.

By the second week of school, Logan already had a By the second week of school, Logan already had a cold/ear infection, and missed 2 days of school. 

I made a batch of Elderberry syrup to boost all of our immune systems!! We some have syrup in the fridge, use 1-2 tbsp. then top off with fizzy water. Or same amount, add to warm water, and have it like a tea. Don’t get the water too warm, around 100 degrees Fahrenheit, you don’t kill the health benefits of raw honey. 

I also made a batch and froze in ice cube trays to keep on hand as the syrup should be used within a week, I believe. 

As you can tell, Logan love it!! #kidapproved 

Elderberry syrup has many health benefits, including: 
Immune system support, it can help prevent and relieve cold and flu symptoms. Elderberries are high in fiber, which can help with digestion and relieve constipation. They are full of antioxidants, may help reduce inflammation, and so much more!

I have an active, healthy starter. It took about 4.5 hours for my starter to more than double to then combine her to the dough. And now my dough will rest until tomorrow.

The base of the dough:
420 grams of flour (I use King Arthur’s Bread Flour)
300 grams hot water (my water temp is 118•F)
10 grams salt
20 grams hot water

Let it rest while the starter more than doubles.
