4Baby Bok Choy, sliced lenghtwisesubstitute spinach
4cupsBroth, chicken or beef depending on your meat
1cupWater
1-2packetsRamen NoodlesCook according to package directions
Instructions
In a large pot, sauté onion until soft (about 5 min)
Add in mushrooms and cook about 3 min.
Then add in the garlic and ginger. Stir in and cook about 1 min. Just until fragrant. Do not let it burn.
Add the broth, water, soy sauce, vinegar, oyster sauce, fish sauce, garlic sauce. Stir and simmer.
I slice my chicken or beef, depending on which I am adding, and cook it in a separate pan. Cook it until right before it is done. Remove from pan and slice thinly then add it to the broth pot. Will finish cooking in the broth.
Boil water and prepare noodles according to package. Drain and set aside. Might need to add a little oil to keep it all from sticking together. I recommend not adding the noodles to the the soup. That way if you have left overs the noodles wont get mushy.
While your boiling your noodles or once then are done, then you want to add the bok choy to the broth for about 5 min.
Ready to server! Scoop noodles into bowl first, then add broth.
Top with either cilantro, green onions, chili garlic sauce, lime wedge, sesame seeds.Enjoy!
