Chicken Enchilada Soup | Green

Quick and easy meal. Green or Red. So many variation to this recipe.

  • 2 12.5 oz Can Chicken drained and shredded
  • 4 cups Chicken Broth
  • 15 oz Pinto Beans
  • 15 oz Black Beans
  • 29 oz Enchilada Sauce Green or Red
  • 7 oz Diced Green Chilies
  • 10 oz Ro Tel Or any diced tomato with chilies
  • 1 cup Orzo Pasta


  • Drain and rinse your beans. 
  • Rinse and shred your chicken.
  • Starting with liquid ingredients add to pot. Then add all other ingredients. Bring to a boil, turn down to a simmer and cook for 30 min. 
  • Add in Orzo Pasta at simmer point, stirring occasionally.
  • Top with cheese of your choice and tortilla chips.
