Chicken Enchilada Soup | Green
Quick and easy meal. Green or Red. So many variation to this recipe.
Servings: 6 people
- 2 12.5 oz Can Chicken drained and shredded
- 4 cups Chicken Broth
- 15 oz Pinto Beans
- 15 oz Black Beans
- 29 oz Enchilada Sauce Green or Red
- 7 oz Diced Green Chilies
- 10 oz Ro Tel Or any diced tomato with chilies
- 1 cup Orzo Pasta
Drain and rinse your beans.
Rinse and shred your chicken.
Starting with liquid ingredients add to pot. Then add all other ingredients. Bring to a boil, turn down to a simmer and cook for 30 min.
Add in Orzo Pasta at simmer point, stirring occasionally.
Top with cheese of your choice and tortilla chips.
